Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 3/4 tsp. salt
  • 1/4 tsp. ground red pepper
  • 1 Tbsp. olive oil
  • 1 large onion
  • 1 clove garlic
  • 1 1/2 cups rice
  • 2 (14 1/2 oz.) cans chicken broth
  • 1 small green bell pepper
  • 1 (3 oz.) package cream cheese
  • 1 large tomato
  • 1/4 cup fresh basil

Instructions

  1. Sprinkle chicken with salt and red pepper; set aside.
  2. Heat oil in a 10-inch skillet over medium heat.
  3. Add onion and garlic; cook and stir for 3 minutes.
  4. Add chicken; cook and stir until no longer pink.
  5. Add rice; cook and stir for 1 minute.
  6. Add chicken broth to the skillet; bring to a boil.
  7. Reduce heat; cover tightly and simmer for 20 minutes.
  8. Stir in green bell pepper.
  9. Remove from heat and let stand, covered, until all liquid is absorbed, about 5 minutes.
  10. Stir in cream cheese until melted and creamy.
  11. Stir in chopped tomato and sliced basil.
