Ingredients

  • 1/4 cup diced salt pork
  • 1/2 cup chopped onion
  • 2 cans cream of potato soup
  • 2 cans of milk
  • 1 cup thinly sliced carrots
  • 1 can whole kernel corn, drained
  • 1 pound fillet of white fish, cut into 2-inch pieces
  • 1 bay leaf
  • 1/8 teaspoon pepper
  • 1 cup diced celery

Instructions

  1. In a saucepan, brown the diced salt pork and remove it.
  2. In the drippings, cook the chopped onion, diced celery, and sliced carrots until tender.
  3. Add the cooked salt pork, cream of potato soup, milk, drained corn, bay leaf, and pepper to the saucepan.
  4. Bring to a boil, then reduce heat and simmer for 10 minutes or until the fish is tender, stirring frequently.
