Instructions

  1. Cut off tops from 8 green peppers or cut 4 in half lengthwise; remove seeds and membranes.
  2. Parboil peppers in boiling salted water for 5 minutes; drain.
  3. Brown meat and chopped onion in a skillet; drain off excess fat.
  4. Add corn, 1 cup tomato sauce, salt, and pepper to the meat mixture.
  5. Simmer until heated through, about 5 minutes.
  6. Remove from heat; add shredded Cheddar cheese and stir until melted.
  7. Add 1 cup bread crumbs to the mixture.
  8. Fill peppers with the meat-corn mixture.
  9. Combine 1/2 cup bread crumbs with melted butter; top the filled peppers with this mixture.
  10. Pour remaining tomato sauce in the bottom of a baking pan; arrange the filled peppers in the pan.
  11. Bake in a preheated 350°F oven for 25 to 30 minutes or until heated through.
  12. Place half a cheese slice on each pepper.
  13. Place the peppers under a broiler until the cheese melts.
