Ingredients

  • 1/4 cup margarine
  • 8 chicken legs and thighs
  • 1/4 cup flour
  • 1 (16 oz) can whole onions, drained
  • 1 (4 oz) can chopped mushrooms, drained
  • 1 small can evaporated milk
  • 1 can cream of mushroom soup
  • 8 oz grated sharp cheese
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika

Instructions

  1. Preheat oven to 425°F.
  2. Melt margarine in a 9 x 13-inch pan.
  3. Coat chicken legs and thighs with flour, then place skin side down in the melted margarine.
  4. Bake uncovered for 30 minutes.
  5. Turn the chicken pieces and bake for an additional 15 to 20 minutes or until browned.
  6. Remove from oven and reduce heat to 325°F.
  7. Add drained whole onions and chopped drained mushrooms to the pan.
  8. In a bowl, mix evaporated milk, cream of mushroom soup, grated sharp cheese, and pepper.
  9. Pour the cheese mixture over the chicken and vegetables.
  10. Cover with foil and bake for 15 to 20 minutes.
  11. Serve hot over rice.
