Instructions

  1. On waxed paper, coat chicken pieces with flour.
  2. In a 12-inch skillet, heat salad oil over medium-high heat and cook chicken until browned on all sides.
  3. Remove chicken from skillet and set aside.
  4. In the drippings, cook garlic, onions, celery, green pepper, curry powder, and salt over medium heat until vegetables are tender, about 10 minutes, stirring occasionally.
  5. Stir in tomatoes and their liquid.
  6. Add chicken pieces back into the skillet and heat to boiling.
  7. Reduce heat and simmer uncovered for 40 minutes or until chicken is tender.
  8. Meanwhile, cook rice according to package instructions.
  9. In a small skillet, melt butter and toast almonds until golden.
  10. Stir currants or raisins into the curry before serving.
