Ingredients

  • 1 package seasoned cornbread stuffing
  • 1 stick melted butter
  • 1 cup chicken broth
  • 3 cups broiled, diced chicken
  • 1/2 cup chopped onion
  • 1/2 cup green onion tips or chives
  • 1/2 cup chopped celery
  • 1/2 cup mayonnaise
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1 can cream of mushroom soup
  • 2 cups grated cheese

Instructions

  1. Mix the seasoned cornbread stuffing, melted butter, and chicken broth.
  2. Spread half of the stuffing mixture in the bottom of a 9 x 13-inch casserole dish.
  3. In a separate bowl, combine diced cooked chicken, chopped onion, chopped celery, mayonnaise, salt, eggs, milk, and cream of mushroom soup.
  4. Spread this mixture over the stuffing layer in the casserole dish.
  5. Top with the remaining stuffing mixture.
  6. Sprinkle grated cheese evenly over the top.
  7. Bake at 325°F (163°C) for 40 minutes.
  8. Optionally, add cheese during the last 10 minutes of baking.
  9. Allow to sit out for 1 hour before serving, especially if made ahead.
