Ingredients
- 1 package seasoned cornbread stuffing ⓘ
- 1 stick melted butter ⓘ
- 1 cup chicken broth ⓘ
- 3 cups broiled, diced chicken ⓘ
- 1/2 cup chopped onion ⓘ
- 1/2 cup green onion tips or chives ⓘ
- 1/2 cup chopped celery ⓘ
- 1/2 cup mayonnaise ⓘ
- 1 teaspoon salt ⓘ
- 2 eggs ⓘ
- 1 cup milk ⓘ
- 1 can cream of mushroom soup ⓘ
- 2 cups grated cheese ⓘ
Instructions
- Mix the seasoned cornbread stuffing, melted butter, and chicken broth.
- Spread half of the stuffing mixture in the bottom of a 9 x 13-inch casserole dish.
- In a separate bowl, combine diced cooked chicken, chopped onion, chopped celery, mayonnaise, salt, eggs, milk, and cream of mushroom soup.
- Spread this mixture over the stuffing layer in the casserole dish.
- Top with the remaining stuffing mixture.
- Sprinkle grated cheese evenly over the top.
- Bake at 325°F (163°C) for 40 minutes.
- Optionally, add cheese during the last 10 minutes of baking.
- Allow to sit out for 1 hour before serving, especially if made ahead.
