Ingredients

  • 2 chicken breasts, split and skinned
  • 4 medium potatoes
  • 2 large carrots
  • 1/2 lb. fresh green beans or 10 oz. frozen green beans
  • 1 large onion
  • 1 Tbsp. dried parsley flakes
  • freshly ground black pepper
  • 1/2 cup dry sherry

Instructions

  1. Place chicken breasts in a large heavy ovenware pot.
  2. Peel potatoes and slice into 1/2-inch thick slices; place on top of the chicken.
  3. Peel and quarter the onion.
  4. Peel the carrots and cut them lengthwise.
  5. Arrange carrots, green beans, parsley flakes, and freshly ground black pepper on top of the potatoes.
  6. Pour the dry sherry over all the ingredients.
  7. Cover the pot tightly with a lid.
  8. Bake at 300°F (150°C) for 2 hours.
