- Place chicken breasts in a large heavy ovenware pot.
- Peel potatoes and slice into 1/2-inch thick slices; place on top of the chicken.
- Peel and quarter the onion.
- Peel the carrots and cut them lengthwise.
- Arrange carrots, green beans, parsley flakes, and freshly ground black pepper on top of the potatoes.
- Pour the dry sherry over all the ingredients.
- Cover the pot tightly with a lid.
