Ingredients

  • 4 c. butter
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • dash of black pepper
  • 1 can Pet milk
  • 1 1/2 c. shredded Cheddar cheese
  • 2 Tbsp. Parmesan cheese
  • 1/2 medium onion
  • 1 1/3 c. Minute rice
  • 1/2 tsp. oregano
  • 1 Tbsp. parsley
  • dash of cayenne pepper
  • 1 1/3 c. water
  • 1 (1 lb.) can whole, drained tomatoes
  • 1 pkg. cleaned shrimp

Instructions

  1. Melt butter in a saucepan over low heat.
  2. Stir in flour, salt, black pepper, oregano, and cayenne pepper; cook until smooth.
  3. Gradually add Pet milk, cooking over medium heat until the sauce thickens.
  4. Add shredded Cheddar and Parmesan cheeses, stirring until melted and smooth.
  5. In a separate pot, cook Minute rice according to package instructions, using water.
  6. Add sliced or chopped onion and drained tomatoes to the cooked rice, stirring to combine.
  7. Add cleaned shrimp to the sauce and cook until shrimp are pink and cooked through.
  8. Serve the shrimp mixture over the cooked rice with tomato and onion mixture.
