Ingredients

  • 1 2/3 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 broiler chicken, skinned and cut up
  • 1 tablespoon olive oil
  • 4 cups chicken broth or stock
  • 1 large egg
  • 2 large egg whites
  • 1 cup milk
  • 3 tablespoons butter or margarine
  • 3 tablespoons minced parsley
  • 1 teaspoon chopped thyme or 1/4 teaspoon dried thyme
  • 1/2 cup sliced mushrooms

Instructions

  1. Combine 1/3 cup flour with 1/4 teaspoon salt and pepper.
  2. Coat the broiler chicken pieces in the flour mixture.
  3. Cook the chicken in moderately hot oil for 4 minutes on each side.
  4. Add chicken broth and bring to a boil.
  5. Lower heat and simmer the chicken for 15 minutes.
