Ingredients
- 1 2/3 cups flour ⓘ
- 1/2 teaspoon salt ⓘ
- 1/2 teaspoon pepper ⓘ
- 1 broiler chicken, skinned and cut up ⓘ
- 1 tablespoon olive oil ⓘ
- 4 cups chicken broth or stock ⓘ
- 1 large egg ⓘ
- 2 large egg whites ⓘ
- 1 cup milk ⓘ
- 3 tablespoons butter or margarine ⓘ
- 3 tablespoons minced parsley ⓘ
- 1 teaspoon chopped thyme or 1/4 teaspoon dried thyme ⓘ
- 1/2 cup sliced mushrooms ⓘ
Instructions
- Combine 1/3 cup flour with 1/4 teaspoon salt and pepper.
- Coat the broiler chicken pieces in the flour mixture.
- Cook the chicken in moderately hot oil for 4 minutes on each side.
- Add chicken broth and bring to a boil.
- Lower heat and simmer the chicken for 15 minutes.
