Chicken Sausage Gumbo

Ingredients

  • 4 lb. chicken, cut up
  • 1 1/2 cups fat
  • flour (enough to make a medium roux)
  • 4 onions, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, sliced
  • 4 quarts cold water or chicken stock
  • 1/2 lb. smoked sausage
  • salt
  • pepper
  • 1 cup parsley, chopped
  • 1/2 bunch green onions with tops
  • 2 cups okra (optional)

Instructions

  1. Brown the chicken in some fat in a large iron pot.
  2. Remove the chicken from the pot and set aside.
  3. Add the remaining fat and flour to the pot, stirring constantly to make a medium-consistency roux and cook until browned.
  4. Add chopped celery, onions, and bell pepper to the roux and sauté, stirring occasionally, until the vegetables begin to separate.
  5. Add cold water or chicken stock all at once to the pot.
  6. Bring the mixture to a rapid boil.
  7. Return the cooked chicken to the pot.
  8. Simmer for about 1 hour.
  9. Add smoked sausage slices to the gumbo and cook for additional time.
  10. Season to taste with salt and pepper.
  11. Add chopped parsley and green onion tops just before serving.
  12. Serve the gumbo over rice.
