Ingredients

  • 8 slices day-old bread
  • 2 cups diced cooked chicken
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup finely chopped celery
  • 1/2 cup mayonnaise
  • 3/4 teaspoon salt
  • dash of pepper
  • 2 slightly beaten eggs
  • 1 1/2 cups milk
  • 1 can condensed cream of mushroom soup
  • 1/2 cup shredded sharp process American cheese

Instructions

  1. Butter 2 slices of bread, cut into 1/2-inch cubes, and set aside.
  2. Cut the remaining bread into 1-inch cubes.
  3. Place half of the unbuttered bread cubes in the bottom of an 8 x 8 x 2-inch baking dish.
  4. Combine cooked diced chicken, chopped onion, chopped green pepper, chopped celery, mayonnaise, salt, and pepper.
  5. Spoon the chicken mixture over the bread cubes in the dish.
  6. Sprinkle the remaining unbuttered bread cubes over the chicken mixture.
  7. In a bowl, beat the eggs and mix with milk.
  8. Pour the egg and milk mixture over the layered ingredients in the dish.
  9. Cover and chill for at least 1 hour or overnight.
  10. Spoon condensed cream of mushroom soup on top of the chilled casserole.
  11. Sprinkle shredded sharp process American cheese over the top.
  12. Bake in a slow 325°F oven for 50 minutes or until set.
  13. During the last few minutes of baking, sprinkle with additional shredded cheese if desired.
