  • 3 c. bean sprouts
  • 1/2 c. sliced water chestnuts
  • 1/2 c. sliced bamboo shoots
  • 4 oz. sliced mushrooms

Instructions

  1. In a medium bowl, combine 2 tablespoons water, 1 tablespoon cornstarch, and 1 tablespoon soy sauce.
  2. Add the sliced chicken to the mixture and toss until coated; set aside.
  3. In a small bowl, mix 1/2 cup water, remaining 2 tablespoons cornstarch, remaining 1 tablespoon soy sauce, and the sugar; set aside.
  4. Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.
  5. Add the coated chicken slices and cook until browned and cooked through; remove from skillet and set aside.
  6. In the same skillet, add remaining oil and sauté garlic and sliced onion until fragrant and translucent.
  7. Add sliced celery, cabbage, bean sprouts, water chestnuts, bamboo shoots, and sliced mushrooms; stir-fry until vegetables are tender-crisp.
  8. Return the cooked chicken to the skillet, pour in the sauce mixture, and toss to combine thoroughly.
