Ingredients

  • 4 to 5 lb duck
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp ground cloves
  • 1/8 tsp anise seed
  • 1/8 tsp fennel seed
  • 1/8 tsp cinnamon
  • water
  • oil for frying
  • 1 egg
  • 1/2 cup dry cracker meal
  • Chinese vegetables
  • shredded lettuce
  • 2 green onions

Instructions

  1. Combine the spices in a large pot.
  2. Add the duck and enough water to cover.
  3. Simmer for 45 minutes.
  4. Remove the duck from the pot, reserving 2 cups of broth.
  5. Heat 1/2 inch of oil in a large frying pan.
  6. Fry the duck on each side for about 5 minutes until well browned.
  7. Cool the duck.
  8. Remove the meat from the bones in large pieces if possible.
  9. Dip the duck pieces in beaten egg, then in cracker meal crumbs.
  10. Fry the coated duck pieces in the same oil until crispy and heated through.
  11. Cut the duck into 2-inch pieces.
  12. Serve over Chinese vegetables, topped with shredded lettuce and chopped green onions.
  13. If desired, make gravy with the reserved duck broth and 4 tablespoons of flour, then serve alongside with rice.
