Instructions
- Combine the spices in a large pot.
- Add the duck and enough water to cover.
- Simmer for 45 minutes.
- Remove the duck from the pot, reserving 2 cups of broth.
- Heat 1/2 inch of oil in a large frying pan.
- Fry the duck on each side for about 5 minutes until well browned.
- Cool the duck.
- Remove the meat from the bones in large pieces if possible.
- Dip the duck pieces in beaten egg, then in cracker meal crumbs.
- Fry the coated duck pieces in the same oil until crispy and heated through.
- Cut the duck into 2-inch pieces.
- Serve over Chinese vegetables, topped with shredded lettuce and chopped green onions.
- If desired, make gravy with the reserved duck broth and 4 tablespoons of flour, then serve alongside with rice.
