Ingredients

  • 1/2 lb. turkey breast, cubed
  • soy sauce
  • 1/2 tsp. ginger
  • 1 Tbsp. cornstarch
  • 1/2 tsp. m.s.g. (Accent, if desired)
  • 2 to 3 carrots, sliced
  • 1 can pineapple chunks and juice
  • 1 green pepper
  • 1 or 2 bouillon cubes
  • 1/2 c. brown sugar
  • 1/2 c. vinegar
  • 2 Tbsp. cornstarch

Instructions

  1. Put turkey breast into a small bowl.
  2. Add soy sauce to moisten, ginger, cornstarch, and m.s.g. (if desired).
  3. Marinate for about 30 minutes.
  4. Brown turkey in a little oil.
  5. Remove from pan.
  6. Spoon off excess oil.
  7. Into the pan, add brown sugar, vinegar, 2 tablespoons soy sauce, juice from pineapple, and ginger root.
  8. Bring to a boil.
  9. Turn down heat and simmer for a minute or so.
  10. Dissolve 2 tablespoons cornstarch in a little cold water and add to the pan.
  11. Add sliced green pepper, carrots, and browned turkey.
  12. Cook for a couple of minutes.
  13. Add pineapple chunks and heat through.
  14. Garnish with chopped green onions.
  15. Serve over rice.
