Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 Tbsp. vanilla
  • 2 c. sugar
  • 4 eggs
  • 1 (1 lb.) can (2 c.) pumpkin
  • 1 c. Crisco oil
  • 1 1/2 c. bran flakes
  • 1 (6 oz.) pkg. chocolate chips
  • 1 c. chopped peanuts

Instructions

  1. Sift together flour, baking powder, soda, salt, cinnamon, and sugar. Set aside.
  2. In a large bowl, beat eggs; add pumpkin, vegetable oil, and bran flakes; mix well.
  3. Add dry mixture and stir to combine.
  4. Stir in chopped peanuts and chocolate chips.
  5. Pour batter into a greased 10 x 4-inch tube pan.
  6. Bake for 1 hour at 350°F (175°C).
