Instructions
- Combine corn, cabbage, red pepper, celery, onion, garlic, celery seed, and spices in a large kettle.
- Stir in vinegar.
- Bring to a boil over medium heat.
- Reduce heat and simmer, uncovered, for 15 to 20 minutes.
- If the relish is too thin, mix 2 to 3 tablespoons of flour with 1/2 cup cold water and blend into the relish.
- Bring to a boil and continue cooking until the liquid is thickened and smooth, stirring constantly.
- Ladle into hot sterilized jars and seal.
