Ingredients

  • 3 cups self-rising cornmeal
  • 1/4 cup all-purpose flour
  • pinch of soda
  • 2 eggs
  • 3/4 cup chopped onion
  • 1 3/4 cups herb-seasoned stuffing mix
  • 1/2 teaspoon rubbed sage
  • 1 can cream of chicken soup
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 cups buttermilk
  • 1 cup chopped celery
  • 3 tablespoons bacon drippings

Instructions

  1. Combine self-rising cornmeal, all-purpose flour, sugar, salt, and soda; stirring lightly.
  2. Add buttermilk and beaten eggs, mixing well.
  3. Stir in chopped celery and onion.
  4. Heat bacon drippings in a 10-inch iron skillet until very hot.
  5. Add 1 tablespoon of bacon drippings to the batter, mixing well.
  6. Pour batter into the hot skillet and bake at 400°F for about 30 minutes or until lightly browned.
  7. Crumble the baked cornbread into a large bowl, add herb-seasoned stuffing mix and rubbed sage, and mix.
