Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 1 can tomato soup
  • 2 c water
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp flour
  • 1 beaten egg
  • 1 Tbsp cooking oil
  • 1/2 tsp salt
  • 1 Tbsp chili powder
  • 1 c whole kernel corn, drained
  • 1/2 c chopped green pepper
  • 3/4 c cornmeal
  • 1 Tbsp sugar
  • 1/3 c milk

Instructions

  1. Brown the ground beef and chopped onion in a skillet over medium heat.
  2. Add the tomato soup, water, salt, pepper, chili powder, corn, and chopped green pepper to the skillet.
  3. Simmer the mixture for 15 minutes, stirring occasionally.
  4. Preheat the oven to 375°F (190°C).
  5. In a bowl, combine the cornmeal, sugar, and milk to make the cornbread batter.
  6. Pour the beef mixture into a greased baking dish.
  7. Spread the cornbread batter evenly over the beef mixture.
  8. Bake in the preheated oven for about 25-30 minutes, until the top is golden brown.
