Country Ham Chowder
Creamy, hearty country ham chowder features tender potatoes, flavorful ham, and sharp cheddar, perfect for warming up on a cold day or serving as comfort food.
Ingredients
- 2 medium potatoes, cut into 1/2-inch cubes ⓘ
- 3 Tbsp. butter ⓘ
- 3/4 c. chopped onions ⓘ
- 1/4 c. chopped carrots ⓘ
- 1/4 c. chopped celery ⓘ
- 3 Tbsp. all-purpose flour ⓘ
- 2 1/2 to 3 c. milk ⓘ
- 1/4 tsp. pepper ⓘ
- pinch of salt ⓘ
- 2 tsp. Dijon mustard ⓘ
- 1 c. finely chopped ham ⓘ
- 1 1/2 c. grated sharp Cheddar cheese ⓘ
Instructions
- Simmer potatoes and carrots in 3/4 cup water, covered, about 10 minutes or until tender.
- Reserve any liquid for the soup.
- Melt butter in a large saucepan.
- Saute onions and celery until golden brown and soft.
- Stir in flour and cook for 2 minutes, stirring well.
- Add milk, potatoes with liquid, pepper, salt, and mustard.
- Bring to a slow simmer.
- Add ham and cheese.
- Cook over low heat for 5 minutes.
- Serve hot.
