Ingredients

  • 1 clove garlic, peeled
  • 1 (1 1/2-inch) piece ginger root, peeled
  • 1/4 cup parsley leaves
  • 1 medium onion
  • 1 cup soy sauce
  • 1 can chicken broth
  • 1/2 cup sugar
  • 2 tablespoons red wine vinegar
  • 1/2 cup dry sherry
  • ground white pepper
  • 4 pounds chicken breasts

Instructions

  1. Mince the garlic, ginger, parsley, and onion.
  2. Place the minced ingredients in a large plastic container.
  3. Stir in the soy sauce, chicken broth, sugar, vinegar, sherry, and ground white pepper.
  4. Add the chicken breasts to the marinade and turn to coat evenly.
  5. Cover and refrigerate, turning once, for overnight or up to 24 hours.
  6. Remove the chicken from the marinade and pat dry.
  7. Place the chicken on a hot grill.
  8. Cover and cook, basting occasionally with the marinade, for approximately 30 minutes, turning occasionally.
