Ingredients

  • 1 lb. ground round
  • 2 slices bread, cubed
  • 1/4 cup milk or tomato juice
  • 1/4 cup minced onion
  • 2 teaspoons tomato paste
  • 1 tablespoon Worcestershire sauce or steak sauce
  • 2 eggs, beaten
  • 1 (1 lb.) can cranberry sauce
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 tablespoon minced parsley
  • 1 bay leaf
  • 1 clove garlic, minced
  • 1 tablespoon vinegar

Instructions

  1. Pour milk or tomato juice over bread cubes and let soak.
  2. Mix in ground beef, minced onion, tomato paste, Worcestershire or steak sauce, beaten eggs, minced parsley, bay leaf, minced garlic, salt, and pepper.
  3. Form the mixture into 12 meatballs.
  4. Brown the meatballs on all sides in 2 tablespoons of butter or margarine. Drain off excess fat.
  5. Whip cranberry sauce and vinegar with a fork until smooth.
  6. Pour the cranberry mixture over the browned meatballs.
  7. Cover and simmer for 20 minutes.
  8. Serve over rice, noodles, or in the center of a rice or noodle ring.
