Crazy Cornbread
Ingredients
- 1 1/4 cups yellow cornmeal ⓘ
- 1 1/4 cups white flour ⓘ
- 4 teaspoons baking powder ⓘ
- 1 teaspoon kosher salt ⓘ
- 1 teaspoon chili powder ⓘ
- 2 eggs ⓘ
- 1 cup milk ⓘ
- 1 cup cooked pumpkin ⓘ
- 2 tablespoons oil ⓘ
- 2 tablespoons honey ⓘ
- 3/4 cup diced green pepper ⓘ
- 1/3 cup diced red onion ⓘ
- 2 garlic cloves, minced ⓘ
- 3/4 cup canned red beans, drained ⓘ
- 1 cup shredded cheddar cheese (or your choice) ⓘ
Instructions
- Preheat oven to 325.
- Combine the first 5 ingredients.
- In a second bowl mix eggs, milk, pumpkin, oil and honey.
- Stir the wet into the dry.
- Stir in the veggies and beans.
- Pour into a greased 9 x 13 pan.
- Sprinkle the cheese on top.
- Bake for 25- 30 minutes.
- Watch and you may need to cover with tinfoil, so cheese doesn't get overdone.
