Ingredients

  • 1/2 (16 oz.) package lasagna noodles
  • 1 large onion
  • 1 (8 oz.) package sliced mushrooms
  • 1 garlic clove
  • 2 (10 oz.) packages frozen chopped spinach, thawed
  • 1 (16 oz.) low-fat cottage cheese
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1/4 tsp. pepper
  • 2 egg whites
  • 1/3 cup flour
  • 1 (8 oz.) package shredded mozzarella
  • 3 (8 oz.) cans tomato sauce
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Prepare the lasagna noodles according to package instructions.
  2. In a skillet over medium heat, cook the onion, sliced mushrooms, and garlic until tender.
  3. Remove from heat.
  4. Stir in the thawed chopped spinach, oregano, basil, and pepper; set aside.
  5. In a food processor, blend the cottage cheese, egg whites, flour, and 1 cup of shredded mozzarella until smooth.
  6. Preheat the oven to 375°F (190°C).
  7. In a 13 x 9-inch pan, arrange 3 cooked lasagna noodles.
  8. Top with half of the spinach mixture, half of the cheese mixture, and half of the tomato sauce.
  9. Arrange 3 more noodles on top; repeat the layers with remaining spinach mixture, cheese mixture, and tomato sauce.
  10. Top with the remaining 3 noodles.
  11. Sprinkle with the remaining shredded mozzarella and grated Parmesan cheese.
  12. Bake for 45 minutes or until bubbly and hot.
  13. Remove from oven and let stand for 10 minutes before serving.
