  • 1 Tbsp. chopped parsley
  • 3 to 4 Tbsp. sour cream
  • 3 Tbsp. melted butter

Instructions

  1. Place the flour, egg, egg yolk, oil, 4 tablespoons of the milk, salt, and pepper in a bowl.
  2. Beat until smooth.
  3. Add enough remaining milk to achieve a pourable consistency.
  4. Refrigerate the batter for 30 minutes.
  5. Sauté the sliced mushrooms until tender.
  6. Prepare the crepes by cooking a thin layer of batter in a skillet until golden on both sides.
  7. Fill the crepes with cooked chicken or crabmeat, sautéed mushrooms, chopped hard-boiled eggs, and chopped parsley.
  8. Mix sour cream with melted butter to create a sauce.
  9. Serve the filled crepes drizzled with the sour cream sauce and grated Cheddar cheese.
