Ingredients

  • 1/2 lb ground pork sausage
  • 1/4 cup chopped onion
  • 1 (16 oz) can chopped sauerkraut, drained
  • 2 tablespoons fine dry bread crumbs
  • 1 (3 oz) package cream cheese, softened
  • 2 tablespoons chopped fresh parsley
  • 1 cup fine dry breadcrumbs
  • vegetable oil
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 1 cup mayonnaise or salad dressing
  • 1/4 cup prepared mustard
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup all-purpose flour

Instructions

  1. Combine sausage and chopped onion in a large skillet; cook until the sausage is browned and crumbles, then drain well.
  2. Stir in drained sauerkraut and 2 tablespoons bread crumbs into the sausage mixture.
  3. In a large bowl, combine softened cream cheese, 2 tablespoons chopped parsley, prepared mustard, garlic salt, and pepper; add the sausage mixture and stir well.
  4. Cover and chill the mixture for 2 hours.
  5. In a small bowl, mix mayonnaise and prepared mustard; set aside.
  6. In another small bowl, beat eggs and milk together; set aside.
  7. Shape the sausage mixture into 3/4-inch balls, then roll in flour.
  8. Dip each ball into the egg mixture, then roll in 1 cup dry bread crumbs.
  9. Pour vegetable oil to a depth of 2 inches into a Dutch oven and heat to 375°F.
  10. Fry the meatballs in batches for about 2 minutes or until golden brown, then drain on paper towels.
  11. Serve the meatballs hot with the mayonnaise and mustard dipping sauce.
