  • 1/2 cup chopped celery
  • 4 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground red pepper
  • 16 oz. frozen corn (optional)
  • 1 (14.5 oz.) can stewed tomatoes (optional)
  • 1 (14.5 oz.) can green beans, drained (optional)

Instructions

  1. Make a roux in a heavy saucepan by stirring together the flour and cooking oil until smooth.
  2. Cook over medium-high heat for 5 minutes, stirring constantly.
  3. Reduce heat to medium and cook and stir for about 15 minutes more, or until the roux is dark reddish brown.
  4. Allow the roux to cool.
  5. In a 3-1/2, 4, or 5-quart crock pot, place the water and stir in the roux.
  6. Add the smoked sausage, chicken, okra, onion, bell pepper, celery, garlic, salt, pepper, and red pepper.
  7. Also add corn, tomatoes, and green beans if desired.
  8. Mix all ingredients together.
  9. Cover and cook on low heat for 6 to 7 hours, or on high heat for 3-1/2 to 3 hours.
