Ingredients

  • 6 large or 8 medium green peppers
  • 1 lb. ground lean beef
  • 1/3 c. minced onion
  • 1/2 c. chopped celery
  • 1 c. instant rice
  • 1/2 c. milk
  • 1 (10 oz.) can tomato soup
  • 1 soup can water
  • 1 egg
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. chili powder

Instructions

  1. Cut the tops off of the peppers and remove stems, setting the tops aside for later use.
  2. Clean out the inside of the peppers to remove seeds and membranes.
  3. Brown the ground beef in a skillet and drain excess grease.
  4. In a bowl, combine the cooked ground beef, minced onion, chopped celery, instant rice, milk, egg, salt, pepper, and chili powder. Mix well.
  5. Stuff the prepared peppers with the meat and rice mixture.
  6. In the crock-pot, combine the tomato soup and water.
  7. Place the pepper tops in the bottom of the crock-pot to prevent the stuffed peppers from spilling.
  8. Set the stuffed peppers on top of the tops in the crock-pot.
  9. Cover and simmer on high for 2 hours.
  10. Spoon the tomato sauce over the peppers when serving.
