Ingredients

  • 4 Tbsp butter
  • 1/2 cup finely chopped onion
  • 1 clove garlic minced
  • 1/2 cup peeled, diced apple
  • 1 Tbsp curry powder
  • 3 Tbsp flour
  • 1/3 cup peeled, chopped tomato
  • 3 cups chicken broth
  • 1/2 lb backfin crab meat
  • 1/2 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. Melt butter in a large pot; add chopped onion and cook until wilted.
  2. Add minced garlic and diced apple; stir.
  3. Sprinkle curry powder and flour over the mixture and stir well.
  4. Add chopped tomato and chicken broth, stirring rapidly with a whisk.
  5. Cook until the mixture is thick and smooth; season with salt and pepper to taste.
  6. Add crab meat and simmer for 10 minutes.
  7. Stir in heavy cream and bring to a boil.
  8. Add shakes of Tabasco sauce to taste.
  9. Garnish with chopped parsley before serving.
