Ingredients

  • 1 cup soft bread crumbs
  • about 2 slices bread
  • 1 (28 oz.) jar None Such ready-to-use mincemeat
  • 1 1/2 lb. lean ground beef
  • 1 egg
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. vegetable oil
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper
  • 2 tsp. curry powder
  • 1/2 cup ReaLemon lemon juice from concentrate

Instructions

  1. In a medium bowl, combine bread crumbs, 2/3 cup mincemeat, ground beef, egg, salt, and pepper. Mix well.
  2. Shape the mixture into 1 1/2-inch meatballs.
  3. In a large skillet, brown the meatballs in vegetable oil. Remove them from the skillet once browned.
  4. In the same skillet, cook chopped onion and green pepper until tender.
  5. Add remaining mincemeat, curry powder, and ReaLemon lemon juice to the skillet. Mix well.
  6. Return the meatballs to the skillet.
  7. Cover and simmer for 30 minutes, stirring occasionally.
  8. Serve the meatballs with hot cooked rice.
