Ingredients
- 1 cup soft bread crumbs ⓘ
- about 2 slices bread ⓘ
- 1 (28 oz.) jar None Such ready-to-use mincemeat ⓘ
- 1 1/2 lb. lean ground beef ⓘ
- 1 egg ⓘ
- 2 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 1 Tbsp. vegetable oil ⓘ
- 1 cup chopped onion ⓘ
- 1/2 cup chopped green pepper ⓘ
- 2 tsp. curry powder ⓘ
- 1/2 cup ReaLemon lemon juice from concentrate ⓘ
Instructions
- In a medium bowl, combine bread crumbs, 2/3 cup mincemeat, ground beef, egg, salt, and pepper. Mix well.
- Shape the mixture into 1 1/2-inch meatballs.
- In a large skillet, brown the meatballs in vegetable oil. Remove them from the skillet once browned.
- In the same skillet, cook chopped onion and green pepper until tender.
- Add remaining mincemeat, curry powder, and ReaLemon lemon juice to the skillet. Mix well.
- Return the meatballs to the skillet.
- Cover and simmer for 30 minutes, stirring occasionally.
- Serve the meatballs with hot cooked rice.
