- Preheat oven to 200 degrees Fahrenheit.
- Coat an 8 x 11 x 0.5 inch baking pan with non-stick spray.
- Pulse Graham Crackers into crumbs in a food processor, or place in a large plastic bag and crush with a rolling pin.
- Yield 2 cups of crumbs.
- In a small bowl, mix crumbs, cocoa powder, and salt; set aside.
- In a large mixing bowl, combine eggs, egg white, light brown sugar, and granulated sugar.
- Beat with an electric mixer on high until thickened, about 2 minutes.
- Blend in instant coffee granules and vanilla.
- Gently fold in chopped pitted dates.
- Add chocolate chips and the cracker mixture to the batter and fold gently.
- Scrape the batter into the prepared baking dish and spread evenly.
- Bake the brownies for 25 to 30 minutes or until the top springs back when gently touched.
- Let cool completely in the pan on a wire rack before cutting.
