Ingredients

  • 16 Whole Chocolate Graham Crackers
  • 2 Tbsp. Unsweetened Cocoa Powder
  • 1/4 tsp. Salt
  • 2 large Eggs
  • 1 large Egg White
  • 1/3 c. Packed Light Brown Sugar
  • 1/3 c. Granulated Sugar
  • 2 tsp. Instant Coffee Granules
  • 2 tsp. Vanilla
  • 2/3 c. Chopped Pitted Dates
  • 1/4 c. Chocolate Chips

Instructions

  1. Preheat oven to 200 degrees Fahrenheit.
  2. Coat an 8 x 11 x 0.5 inch baking pan with non-stick spray.
  3. Pulse Graham Crackers into crumbs in a food processor, or place in a large plastic bag and crush with a rolling pin.
  4. Yield 2 cups of crumbs.
  5. In a small bowl, mix crumbs, cocoa powder, and salt; set aside.
  6. In a large mixing bowl, combine eggs, egg white, light brown sugar, and granulated sugar.
  7. Beat with an electric mixer on high until thickened, about 2 minutes.
  8. Blend in instant coffee granules and vanilla.
  9. Gently fold in chopped pitted dates.
  10. Add chocolate chips and the cracker mixture to the batter and fold gently.
  11. Scrape the batter into the prepared baking dish and spread evenly.
  12. Bake the brownies for 25 to 30 minutes or until the top springs back when gently touched.
  13. Let cool completely in the pan on a wire rack before cutting.
