  1. Let the fish fillets thaw and cut into bite-sized pieces.
  2. Mix milk, cream, and saltines; set aside.
  3. Cook chopped onion and celery until soft.
  4. Cook carrots and potatoes, preferably microwaved until tender.
  5. Add chicken broth to the cooked vegetables.
  6. Cover and cook the mixture for 10 minutes.
  7. Add the fish, saltines, and the milk, cream mixture to the pot.
  8. Add butter or oleo.
  9. Bring the chowder to a boil.
  10. Reduce heat, cover, and simmer for 5 to 8 minutes, or until the fish flakes.
  11. Season with salt and pepper to taste before serving.
