Ingredients

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 ounces Canadian bacon, chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup sliced green onions
  • 1/2 pound fresh mushrooms, sliced
  • 3 tablespoons butter, melted
  • 1 tablespoon butter

Instructions

  1. Add flour to 1/4 cup melted butter in a saucepan.
  2. Stir until smooth; cook for 1 minute and gradually add milk.
  3. Cook, stirring constantly, until thickened.
  4. Add salt and pepper and set aside.
  5. Saute chopped Canadian bacon, green pepper, green onions, and sliced mushrooms in 3 tablespoons butter until vegetables are crisp-tender.
  6. Drain the cooked vegetables and bacon mixture.
  7. Cook eggs in 1 tablespoon butter without stirring until beginning to set on the bottom.
  8. Draw a spatula across the eggs to form large curds.
  9. Continue cooking until eggs are cooked but still moist.
  10. Stir in the bacon mixture and the white sauce.
  11. Place the mixture in a greased 13 x 9-inch baking dish.
  12. Combine 2 tablespoons melted butter and bread crumbs and sprinkle over the egg mixture.
  13. Bake, uncovered, at 350°F (175°C) for 20 to 25 minutes.
  14. Make ahead up to 24 hours and refrigerate.
  15. Let stand at room temperature for 30 minutes before baking.
  16. Reheat leftovers as desired.
