- Add flour to 1/4 cup melted butter in a saucepan.
- Stir until smooth; cook for 1 minute and gradually add milk.
- Cook, stirring constantly, until thickened.
- Add salt and pepper and set aside.
- Saute chopped Canadian bacon, green pepper, green onions, and sliced mushrooms in 3 tablespoons butter until vegetables are crisp-tender.
- Drain the cooked vegetables and bacon mixture.
- Cook eggs in 1 tablespoon butter without stirring until beginning to set on the bottom.
- Draw a spatula across the eggs to form large curds.
- Continue cooking until eggs are cooked but still moist.
- Stir in the bacon mixture and the white sauce.
- Place the mixture in a greased 13 x 9-inch baking dish.
- Combine 2 tablespoons melted butter and bread crumbs and sprinkle over the egg mixture.
- Bake, uncovered, at 350°F (175°C) for 20 to 25 minutes.
- Make ahead up to 24 hours and refrigerate.
- Let stand at room temperature for 30 minutes before baking.
- Reheat leftovers as desired.
