Eggs Seymour is a hearty casserole combining eggs, Canadian bacon, cheddar, and crispy potato chips, perfect for brunch or a comforting family breakfast.

Ingredients

  • 16 slices white bread, crusts removed
  • Canadian bacon, cooked and broken up
  • 8 slices sharp Cheddar cheese
  • 6 eggs
  • 1/2 tsp. salt
  • dash of pepper
  • 1/2 tsp. dry mustard
  • 1/4 cup minced onion
  • 1 Tbsp. Worcestershire
  • 3 cups milk
  • 1/4 pound margarine
  • 1 cup crushed potato chips

Instructions

  1. Lay 8 slices of bread flat in a buttered 9 x 13-inch baking pan.
  2. On top of each slice, place Canadian bacon and 1 slice of sharp Cheddar cheese.
  3. Place the remaining 8 slices of bread over the cheese.
  4. In a bowl, beat the eggs, salt, pepper, dry mustard, minced onion, Worcestershire, and milk together.
  5. Pour this egg mixture over the layered bread in the pan.
  6. Let stand overnight covered in the refrigerator.
  7. Preheat the oven to 350°F (175°C).
  8. Melt 1/4 pound of margarine and drizzle over the top of the casserole.
  9. Cover with 1 cup of crushed potato chips.
  10. Bake at 350°F for 1 hour until golden and set.
