Eggs Seymour is a hearty casserole combining eggs, Canadian bacon, cheddar, and crispy potato chips, perfect for brunch or a comforting family breakfast.

- Lay 8 slices of bread flat in a buttered 9 x 13-inch baking pan.
- On top of each slice, place Canadian bacon and 1 slice of sharp Cheddar cheese.
- Place the remaining 8 slices of bread over the cheese.
- In a bowl, beat the eggs, salt, pepper, dry mustard, minced onion, Worcestershire, and milk together.
- Pour this egg mixture over the layered bread in the pan.
- Let stand overnight covered in the refrigerator.
- Preheat the oven to 350°F (175°C).
- Melt 1/4 pound of margarine and drizzle over the top of the casserole.
- Cover with 1 cup of crushed potato chips.
- Bake at 350°F for 1 hour until golden and set.
