Ingredients

  • 2 cups cubed potatoes
  • 1 small onion, diced
  • 1 can chicken broth
  • 1/3 cup butter
  • 1/4 cup flour
  • 1 (14 oz) can evaporated milk
  • 2 cups water
  • 1 can whole kernel corn
  • 1 can green beans
  • 1/4 cup chopped pimento
  • 1 bay leaf
  • 1/4 teaspoon pepper
  • salt to taste
  • 3/4 cup diced Cheddar cheese
  • 6 hard-boiled eggs, chopped

Instructions

  1. Simmer the cubed potatoes and diced onion in chicken broth until tender, about 10 minutes.
  2. In a separate pan, cook the butter and flour until bubbly.
  3. Gradually add the evaporated milk and water to the butter and flour mixture, stirring constantly.
  4. Cook until the mixture is thick and smooth.
  5. Add this mixture to the pot with the cooked potatoes, onions, and broth.
  6. Add the canned corn, green beans, chopped pimento, bay leaf, pepper, and salt to taste.
  7. Simmer the chowder for 15 minutes.
  8. Remove the bay leaf.
  9. Stir in the diced cheddar cheese and chopped hard-boiled eggs just before serving.
