Ingredients

  • 1/4 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup butter or margarine
  • 2 cups cornbread stuffing mix
  • 1/4 teaspoon snipped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon sage
  • 1 egg, beaten
  • 4 fish steaks (2 lb; 1-inch thick)
  • 1/2 teaspoon salt (optional)

Instructions

  1. Cook and stir onion and celery in butter or margarine in a 2-quart saucepan over medium heat until tender.
  2. Remove from heat. Stir in cornbread stuffing mix, parsley, salt, pepper, sage, and beaten egg.
  3. Place fish steaks in a greased jelly roll pan, 15 1/2 x 1-inch.
  4. Sprinkle fish steaks with 1/2 teaspoon salt, lemon juice, and paprika.
  5. Spoon stuffing around the fish steaks.
  6. Bake uncovered in a 350°F oven until fish flakes easily with a fork, about 35 to 40 minutes.
  7. Cut fish steaks into halves before serving.
