Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1/4 lb. sliced fresh mushrooms
  • 1 clove garlic, minced
  • 1 tsp. dried oregano
  • 1 Tbsp. olive oil
  • 1 tsp. salt
  • 1/4 tsp black pepper
  • 2 Tbsp. all purpose flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 10 oz. chopped spinach, cooked and drained
  • 4 oz. sliced mozzarella or jack cheese

Instructions

  1. Brown ground beef, chopped onion, sliced mushrooms, minced garlic, and dried oregano in olive oil over medium heat.
  2. Add salt and black pepper to the mixture.
  3. Stir in all-purpose flour to the meat mixture.
  4. Add beef broth and cook until the mixture thickens.
  5. Stir in sour cream until well combined.
  6. Add the cooked and drained chopped spinach to the mixture.
  7. Transfer the meat mixture into a 1 1/2 quart casserole dish.
  8. Cut mozzarella or jack cheese into strips and place on top of the meat, criss-crossing the strips to decorate.
  9. Bake at 350°F (175°C) for 15-20 minutes or until heated through and cheese is melted.
