Florentine Beef Casserole

Ingredients
- 1 lb. ground beef ⓘ
- 1 medium onion, chopped ⓘ
- 1/4 lb. sliced fresh mushrooms ⓘ
- 1 clove garlic, minced ⓘ
- 1 tsp. dried oregano ⓘ
- 1 Tbsp. olive oil ⓘ
- 1 tsp. salt ⓘ
- 1/4 tsp black pepper ⓘ
- 2 Tbsp. all purpose flour ⓘ
- 1 cup beef broth ⓘ
- 1 cup sour cream ⓘ
- 10 oz. chopped spinach, cooked and drained ⓘ
- 4 oz. sliced mozzarella or jack cheese ⓘ
Instructions
- Brown ground beef, chopped onion, sliced mushrooms, minced garlic, and dried oregano in olive oil over medium heat.
- Add salt and black pepper to the mixture.
- Stir in all-purpose flour to the meat mixture.
- Add beef broth and cook until the mixture thickens.
- Stir in sour cream until well combined.
- Add the cooked and drained chopped spinach to the mixture.
- Transfer the meat mixture into a 1 1/2 quart casserole dish.
- Cut mozzarella or jack cheese into strips and place on top of the meat, criss-crossing the strips to decorate.
- Bake at 350°F (175°C) for 15-20 minutes or until heated through and cheese is melted.
