  • 1 lb. bag peas

  • 1 1/2 cups celery, chopped
  • 1 1/4 cups chopped carrots
  • 6 small potatoes, peeled and diced

Instructions

  1. Bring 8 cups of water and the bag of peas to a boil and cook for 2 minutes.
  2. Remove from heat and let stand covered for 1 hour.
  3. Add diced ham, diced onion, pepper, marjoram, smoked sausage, salt, and parsley to the mixture.
  4. Cover and simmer for 1 hour, stirring occasionally.
  5. Add chopped celery, chopped carrots, and diced potatoes to the soup.
  6. Cover and cook for an additional 45 minutes.
  7. Thicken the soup with flour if desired and serve.
