Ingredients

  • 1 c. brown sugar
  • 3/4 c. Crisco
  • 2 eggs
  • 1/2 c. molasses
  • 1 c. instant coffee
  • 2 1/2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cloves
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • 1/4 tsp. salt
  • 1 c. raisins

Instructions

  1. Beat eggs and add brown sugar, shortening, molasses, and hot coffee. Beat until well combined.
  2. Add flour, baking soda, cloves, cinnamon, ginger, and salt to the mixture and stir to form a dough.
  3. Spread the dough in a large cookie sheet, about 1/2 inch thick.
  4. Bake in a preheated oven at 375°F (190°C) for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the cookies to cool completely.
  6. Frost with vanilla icing made from powdered sugar and milk to desired consistency.
