  • Juice of 1 lemon
  • 1 c. sugar, fructose or Equal

  1. Mix flour, sugar, eggs, pineapple juice, and lemon juice in a saucepan.
  2. Cook over low heat, stirring constantly, until very thick.
  3. Remove from heat and cool slightly.
  4. Add prepared mustard to the thickened mixture and stir well.
  5. Allow the mixture to cool completely before adding to the fruit mixture.
  6. In a large bowl, combine drained pineapple tidbits, fruit cocktail, diced apples, and the cooled mixture.
  7. Add miniature marshmallows and stir gently.
  8. Grate cheese on top of the mixture.
  9. Sprinkle shredded coconut over the top.
  10. Optional: Decorate with maraschino cherry bits on top before serving.
