Ingredients

  • 4 cups tomato juice
  • 1 medium onion
  • 2 cups diced tomatoes
  • 1 cup green pepper
  • 1 medium cucumber
  • 2 scallions
  • juice of 1 lemon
  • 1/2 cup yellow squash
  • 1/2 cup zucchini
  • dash of cumin
  • 1/4 cup parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon red pepper
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 1 teaspoon honey

Instructions

  1. Dice the onion, tomatoes, green pepper, and cucumber.
  2. Combine all ingredients in a blender or bowl and blend until smooth, if desired.
  3. Chill the soup for 2 hours before serving.
  4. Top with chopped scallions before serving.
