Ingredients

  • 1 1/4 cups sugar
  • 2 tablespoons sugar
  • 1 1/4 cups pumpkin
  • 1/2 cup butter
  • 2 eggs
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup milk

Instructions

  1. Combine 1 1/4 cups sugar, pumpkin and melted butter in a mixing bowl.
  2. Blend in eggs until well mixed.
  3. In a separate bowl, combine flour, baking powder, 1 teaspoon cinnamon, nutmeg, and salt.
  4. Add the dry ingredients alternately with milk to the pumpkin mixture, mixing well after each addition.
  5. Stir in raisins and chopped nuts.
  6. Spoon the batter into well-greased miniature muffin pans, filling each about 2/3 full.
  7. Sprinkle the muffins with the remaining 2 tablespoons sugar and 1/4 teaspoon cinnamon.
  8. Bake at 400°F (200°C) for 25 minutes.
