Ingredients

  • 1 lb. fresh okra or 2 (10 oz. each) pkg. frozen, slightly thawed
  • 1 lb. ground beef
  • 1/4 c. butter
  • 1/2 c. onion, chopped
  • 1 clove garlic, minced (optional)
  • 2 c. chopped canned tomatoes or 4 fresh tomatoes, chopped
  • 2 1/2 c. water or beef broth
  • 1/4 c. tomato paste
  • 3 Tbsp. lemon juice
  • 1/4 tsp. each: allspice and black pepper
  • 1/4 tsp. red pepper or 1/4 tsp. paprika
  • 2 tsp. salt
  • 1/2 c. sliced green pepper

Instructions

  1. Heat butter in a pot over medium heat until melted.
  2. Add chopped onion and minced garlic, sauté until onions are translucent.
  3. Stir in ground beef, breaking it up with a spoon; cook until browned.
  4. Add chopped okra and sliced green pepper, cooking for 5 minutes.
  5. Pour in chopped canned tomatoes, tomato paste, and water or beef broth.
  6. Season with allspice, black pepper, red pepper or paprika, salt, and lemon juice.
  7. Bring the mixture to a simmer, cover, and let cook for 20–25 minutes, stirring occasionally.
  8. Taste and adjust seasoning if needed.
  9. Serve hot with crusty bread or over rice.
