Miniature ground beef quiches with savory biscuit crusts, flavored with garlic, peppers, and green onion, perfect as appetizers or brunch treats for any occasion.

Ingredients

  • 1/4 lb ground beef
  • 1/8 tsp garlic powder
  • 1/8 tsp black pepper
  • 1 cup biscuit mix
  • 1/4 cup cornmeal
  • 1/4 cup cold butter
  • 2 to 3 Tbsp boiling water
  • 1 egg
  • 1/2 cup half and half
  • 1 Tbsp green onion
  • 1 Tbsp sweet red pepper
  • 1/8 tsp salt
  • 1/8 tsp cayenne pepper

Instructions

  1. Cook ground beef with garlic powder and black pepper until done, then drain and set aside.
  2. Combine biscuit mix and cornmeal in a bowl.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Add enough boiling water to form a soft dough.
  5. Press the dough into the bottoms and sides of miniature muffin pans to form shells.
  6. Place a teaspoon of cooked beef mixture into each pastry shell.
  7. In a separate bowl, beat egg and mix with half and half, green onion, red pepper, salt, and cayenne pepper.
  8. Pour the egg mixture over the beef in each muffin cup.
  9. Bake in a preheated oven at 375°F (190°C) for about 15 minutes or until filling is set and golden.
