  • 3 large carrots, cut up
  • 1 cup frozen corn
  • 1 large can (32 oz.) tomatoes or combination of puree and tomato
  • 1 teaspoon salt or to taste
  • 1 teaspoon chili powder
  • 1 1/2 teaspoons dried basil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon garlic powder or 2 fresh garlic cloves, minced

Instructions

  1. Soak all dried beans except lentils and split peas overnight.
  2. Cook soaked beans in about 4 cups water for approximately 1 hour, adding more water if they seem hard.
  3. Add lentils and split peas to the beans and simmer for 20 minutes.
  4. Add canned tomatoes, chopped celery, carrots, onions, and all spices and herbs, then simmer for 30 minutes.
  5. If adding potatoes and turnips, include them now and simmer for an additional 15 minutes.
  6. Add frozen corn and green beans, and simmer for about 10 minutes until vegetables are tender.
