Ingredients

  • 1 cooked ham slice
  • 2 celery stalks
  • 2 carrots
  • 1 onion
  • 1 zucchini
  • 3 15 oz cans Great Northern Beans
  • 1 tsp olive oil
  • 1/2 tsp basil
  • 1/4 tsp pepper
  • 1 can stewed tomatoes
  • 1 can chicken broth
  • 1/2 bag fresh spinach

Instructions

  1. Dice and sauté celery, onion, carrots, zucchini, and ham in a Dutch oven with olive oil and seasoning.
  2. Stir in stewed tomatoes, chicken broth, spinach, one can of beans (smashed), and two cups of water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. Add the remaining beans and sprinkle with Parmesan cheese before serving.
