Ingredients

  • 2 cups ground fully cooked ham
  • 1/2 cup sliced green onions
  • 1/2 cup chopped green pepper
  • 2 1/2 cups shredded Cheddar cheese
  • 8 (7-inch) flour tortillas
  • 4 beaten eggs
  • 2 cups light cream or milk
  • 1 tablespoon flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • few drops bottled hot pepper sauce

Instructions

  1. In a bowl, combine the ground ham, sliced green onions, and chopped green pepper.
  2. Place 1/3 cup of the ham mixture and 3 tablespoons of shredded cheese at one end of each flour tortilla and roll up.
  3. Arrange the tortillas, seam side down, in a greased 12 x 7 1/2 x 2-inch baking dish.
  4. In a separate bowl, beat the eggs, then add the light cream or milk, flour, salt, garlic powder, and hot pepper sauce; mix well.
  5. Pour the egg mixture over the rolled tortillas in the baking dish.
  6. Cover and refrigerate for several hours or overnight.
  7. Bake uncovered in a preheated 350°F (175°C) oven for 45 to 50 minutes or until set.
  8. Sprinkle with the remaining shredded cheese and bake an additional 3 minutes until the cheese is melted.
  9. Let stand for 10 minutes before serving.
