Ingredients

  • 1 cup quick oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup margarine, melted
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ginger
  • 1 (16 oz) can pumpkin
  • 1 (5 1/3 oz) can evaporated milk
  • 2/3 cup sugar
  • 1/4 c. quick oats

Instructions

  1. Mix together 1 cup oats, 1 cup flour, 1/2 cup brown sugar, and 1/2 cup melted margarine.
  2. Press the mixture into the bottom and up the sides of a 10-inch deep dish pie pan to form the crust.
  3. Combine eggs, cinnamon, ground cloves, ginger, pumpkin, evaporated milk, and sugar in a bowl.
  4. Pour the pumpkin mixture into the prepared crust.
  5. Bake in a preheated oven at 350°F (175°C) for about 45 minutes or until set.
  6. Allow to cool before serving.
