Ingredients

  • 1 lb. hamburger
  • 2 stalks celery
  • 2 carrots
  • 1 bell pepper
  • 1 large onion
  • 8 oz. elbow macaroni, cooked
  • 1/2 cup salsa
  • 1/2 lb. grated cheese
  • 2 cans tomatoes
  • 1 cup V-8 juice
  • 2 teaspoons chili powder
  • salt

Instructions

  1. In a heavy skillet, brown the hamburger lightly and remove excess fat. Chop the celery, carrots, bell pepper, onion, and canned tomatoes.
  2. Add all ingredients to the skillet except the cheese and V-8 juice.
  3. Saute until the onions appear transparent.
  4. Stir in the V-8 juice.
  5. Cover and steam for 3 to 5 minutes or until the carrots are tender.
  6. Sprinkle grated cheese over the mixture.
  7. Cover and allow the cheese to melt.
  8. Serve hot.
