  • 1/4 tsp. salt
  • 1/4 c. frozen green peas
  • 1/4 c. raisins
  • 1/4 c. chopped cashews

Instructions

  1. In a medium saucepan, melt butter or margarine over medium heat.
  2. Add chopped onion, minced ginger, ground cumin, ground coriander, cinnamon, and crushed red pepper flakes. Cook, stirring, for 3 minutes.
  3. Add uncooked long grain rice and stir to coat with spices.
  4. Pour in chicken broth and water, then add turmeric and salt (if using). Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 15 minutes until rice is tender and liquid is absorbed.
  6. Stir in frozen green peas, raisins, and chopped cashews. Cover and cook for an additional 5 minutes.
  7. Fluff with a fork and serve hot.
