Iris'S Mexican Corn Bread

A hearty Mexican-inspired cornbread layered with seasoned ground beef, spicy chili peppers, and melted cheddar, perfect for family dinners or casual gatherings.

Ingredients

  • 2 lb. ground beef
  • 1 large chopped onion
  • 4 hot chili peppers, chopped
  • 8 oz. grated cheddar cheese
  • 1 c. cornmeal
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 2 beaten eggs
  • 1 c. buttermilk
  • 1/3 c. oil
  • 1 can cream-style corn

Instructions

  1. Sift together cornmeal, salt, and soda.
  2. Combine the sifted mixture with eggs, buttermilk, oil, and cream-style corn.
  3. Pour half of the bread mixture into a greased deep iron skillet or Dutch oven.
  4. Add the cooked ground beef mixture over the bread layer.
  5. Top with the remaining bread mixture.
  6. Bake at 350 degrees Fahrenheit for 45 minutes.
